Here is how to disable an issue type in your github organization

  1. First click on your profile picture in the top-right corner of the header
  2. Next click on "Organizations" in the dropdown menu
  3. Click on the "Settings" button next to the organization you want to manage
  4. Click on the "Planning" in the left sidebar under "Code, planning, and automation" section
  5. After that, click on "Issue types" in the Planning submenu
  6. Locate the issue type you want to disable 
  7. Next click on the more options menu (three dots) next to it
  8. Then select "Disable" from the dropdown menu
  9. Finally click on the "Disable" button in the confirmation dialog
